Breakfast is one of the most important meals of the day and until recently it was the only meal on a school day that we had as a family. Sitting down together we were able to eat a healthy meal that we could then spend time over talking about the previous day and our plans for the day ahead. Although we tended to have cereal there were days where no one wanted it and on those days it was so easy to reach into the freezer and defrost a few muffins from the selection and have a delicious and healthy breakfast. Although I generally have a sweet tooth first thing in the morning sometimes I just want something savory and these breakfast muffins are ideal as I make my batch ahead of time and then freeze, defrost and reheat for a warming start to the day.
