Homemade Greek Waffle Recipe

In the city near to where I grew up, there is a small restaurant a Waffle restaurant and one of my top tips is if you are ever in Norwich you must go and visit The Waffle House and try one of their savoury waffles. My favourite from the menu is the Greek Waffle, having spent time living in Greece anything that is inspired by the flavours and tastes of that country is always a hit with me so when I was asked to try the Sage No Mess Waffle Maker and create a recipe for National Waffle Day on the 25th March there was only one option a recipe for homemade waffle in your waffle maker inspired by Greece and the traditional Greek Salad.

One of the things that has put me off making waffles at home is that like pancakes and crepes they are really messy to make but with a No Mess Waffle Maker from the same range as our bread maker which I love it would be a good to give it ago. The Sage No Mess Waffle Maker is around the same size as my large frying pan so not too big and will fit in one of the smaller cupboards in our house without a problem – so a bonus as no clutter on the work tops. It is easy to use and with a beep and lights to show you when it is ready you will have no problem letting the kids know when their food has arrived.

Before creating my own recipe I decided to try out one of the recipes provided in the instruction booklet – a basic waffle recipe – it’s easy to make and I had all of the ingredients as standard in my kitchen, however it does make 8 waffles and these are good size waffles so when I’ve made them again (and they have been requested a lot) I’ve halved the recipe and even quartered it to make it doable for a light lunch and as a dessert instead of as a main meal.

My biggest tip is to reduce the amount of batter you use – I don’t know whether I’m just exceptionally good at making up the batter or whether it’s because there was too much but I found instead of 125ml as suggested in the booklet 75ml of batter was much better to use!

Ingredients for Homemade Greek Waffles

This makes 3 waffles in the waffle maker – a perfect amount for my daughter and I to share see the recipe at the bottom for a 8 waffle recipe that you can easily print out as well.

84g plain flour

1 teaspoon caster sugar

1 teaspoon baking powder

Pinch of salt

Pinch of Pepper

140ml Semi Skimmed Milk

38g Butter Melted

1 medium free range egg

1 teaspoon basil

1 teaspoon oregano

50g Feta Crumbled

4 Small cherry tomatoes chopped into quarters

Making the waffles

  1. Heat up the iron whilst you make your waffle mix
  2. Into a bowl add the flour, sugar, baking powder, salt and pepper
  3. In a jug mix the milk, butter and egg
  4. Make a well in the middle of the dry ingredients and add in the liquid
  5. Whisk but don’t worry if it is lumpy
  6. Add in your basil, oregano, crumbled feta and chopped cherry tomatoes
  7. Whisk before you pour each waffle *otherwise you end up with 1 person getting ALL of the feta and tomatoes*

  10. Serve with a small greek salad of beef tomatoes, cucumber, crumbled feta and some olive oil and balsamic or red wine vinegar

Ingredients
  

  • 250 g plain flour

  • 1 tablespoon basil
  • 1 tablespoon oregano
  • 150 g Feta Crumbled
  • 12 Small cherry tomatoes chopped into quarters

Instructions
