Thai Inspired Beef and Broccoli in the Slow Cooker
A spicy Thai inspired beef with broccoli cooked in the slow cooker. Delicious with a kick best served over rice.

beef skirt
cut into thin strips (the butchers counter does this as does you local butchers)

beef stock

dark soy sauce

tablespoon
Worcestershire sauce
1
tablespoon
brown sugar

teaspoons
sriracha sauce
2
cloves
garlic
crushed

teaspoon
dried parsley

tablespoons
cornflour
mixed with 2 tablespoons cold water
2
crowns
broccoli
chopped
Rice for serving

Instructions
Place beef strips in the bowl of the slow cooker.
In a large bowl, whisk together the beef stock, dark soy sauce, Worcestershire sauce, brown sugar, sriracha sauce, and crushed garlic.
Pour over strips of beef.
Set the slow cooker to low and cook for 3 hours.
When the cooking time is up, remove the beef from the slow cooker and set aside.
Add the cornflour and water mixture and whisk to combine in the slow cooker.
Turn the slow cooker to high and bring sauce to a simmer.
Add the beef back to the slow cooker along with the broccoli.
Place the lid on the pot and allow to cook for 10 to 15 minutes, or until the broccoli is tender.
Serve over rice.
