Apple and Cinnamon Muffins
Easy recipe to make these delicious apple and cinnamon breakfast muffins, but there's nothing stopping you eating them anytime. Perfect for autumn baking

Ingredients

Plain Flour
all purpose

teaspoons
baking powder

caster sugar

light brown sugar

buttermilk

vegetable oil

runny honey

medium eggs

teaspoons
cinnamon

Bramley apples
unpeeled and uncored
Instructions
Preheat the oven to 200C and line a 12 hole muffin tin with cases
Peel, core and chop the apples into smallish parts
In a bowl place flour, baking powder, sugars, cinnamon and stir together
Take a jug and crack the eggs whisking them with the buttermilk, honey and vegetable oil
Mix into the dry ingredients - you really don't have to worry about how good a mix it is if it's clumpy etc... it won't be a problem.
Last add in apples and mix
Divide the mixture between the cases and sprinkle with a little brown sugar on top
Bake for around 20 minutes
