Marinade for chicken breasts for the BBQ

Grilled Bahamian Chicken Breasts

Inspired by the barbecues of the Bahamas this Caribbean grilled chicken recipe is mildly spiced unlike the original from the islands and taste delicious.

  • 4 large chicken breasts
  • 1 cup of lime juice From a bottle or freshly squeezed
  • 1 onion finely chopped
  • 4 cloves of garlic use less if you are not a fan of garlic
  • small handful of fresh thyme
  • 2 tbsp olive oil
  • 1 tbsp paprika
  • 1 tspĀ  salt
  • freshly ground pepper.


  • Lay the chicken breasts in a glass dish and pour over the lime juice.
  • Turn so that they are coated and then set aside for 5 minutes.
  • Turn the chicken breasts and repeat this till the chicken has soaked for 20 minutes.
  • In a jug mix together the finely chopped onion, crushed garlic, fresh thyme, olive oil, paprika, salt and pepper.
  • When the time is up for the chicken pour off the lime and add the mix.
  • Coat the chicken breasts thoroughly with the mix and turn and coat again.
  • Cover and place in the fridge.
  • Leave to marinade for a minimum of 30 minutes but you can marinate for up to 2 hours.
  • Heat the barbecue to a high setting and then place in the hottest part.
  • Turn frequently until thoroughly cooked.
  • Enjoy with some rice and beans and a salad for some traditional Caribbean flavours.


If you don't have access to fresh thyme you can switch it out for 1 tsp of dried thyme
