Use this basic muffin recipe to create your own delicious and easy to make flavoured muffins. Add in fresh seasonal or frozen fruit and spices and create a treat that others will be wowed by.
Preheat the oven to 200C and line a 12 hole muffin tin with cases.
In a bowl place flour, baking powder, sugars, and any spices and stir together.
Take a jug and crack the eggs whisking them with the buttermilk, honey and vegetable oil.
Mix into the dry ingredients - you really don't have to worry about how good a mix it is if it's clumpy etc... it won't be a problem.
Add your fruit.
Divide the mixture between the cases and sprinkle with a little brown sugar or crumble mix on top.
Bake for around 20 minutes.
Take out the oven and cool a little and then enjoy!

To this recipe add a little of your chosen spice and up to 200g of fresh or frozen fruit to create your own muffin.Instead of sugar on the top of the muffin, you could add a little crumble mix.
