Ingredients

  • 250 g Plain Flour all purpose
  • 2 teaspoons baking powder
  • 150 g caster sugar
  • 75 g light brown sugar
  • 140 ml buttermilk
  • 125 ml vegetable oil
  • 1 tablespoon runny honey
  • 2 medium eggs
  • 2 teaspoons cinnamon
  • 300 g Bramley apples unpeeled and uncored

Instructions

  • Preheat the oven to 200C and line a 12 hole muffin tin with cases
  • Peel, core and chop the apples into smallish parts
  • In a bowl place flour, baking powder, sugars, cinnamon and stir together
  • Take a jug and crack the eggs whisking them with the buttermilk, honey and vegetable oil
  • Mix into the dry ingredients - you really don't have to worry about how good a mix it is if it's clumpy etc... it won't be a problem.
  • Last add in apples and mix
  • Divide the mixture between the cases and sprinkle with a little brown sugar on top
  • Bake for around 20 minutes
