Easy recipe to cook with kids - perfect for autumn baking with lightly spiced flavour this cookie dough can be made ahead of time and baked when wanted.

Ingredients

  • 4 oz Plain Flour
  • pinch of salt
  • 1 tsp ground cinnamon
  • 4 oz Unsalted sweet butter diced
  • 4 oz Caster Sugar
  • 1 egg
  • 1/2 tsp vanilla extract

Instructions

  • In a bowl mix together the flour, salt and cinnamon put aside to add to the wet ingredients later
  • Using an electric mixer beat the butter until soft.
  • Add in the sugar and continue beating until fluffy
  • In a jug mix together the egg and vanilla extract
  • Now gradually add to the butter and sugar mix
  • When combined add in the dry ingredients and mix together to form a soft dough
  • Split into 2 pieces and wrap in foil
  • Place in the freeze until the dough is firm
  • Preheat the Oven to 190C
  • Take out and roll the dough then using a leaf cutter cut out the shapes
  • Cook for 10 minutes until lightly brown
  • Leave to cool and enjoy
