Simple Cuban Adobo Chicken and Bacon Traybake

Ingredients

  • 4 chicken breasts
  • 2 tbsp lime juice
  • 1 tbsp oregano
  • 1 tsp cumin powder
  • salt and pepper to taste
  • Olive Oil
  • 1 knob Unsalted butter
  • 8 rashers of smoked or unsmoked bacon - the recipe is easily adaptable
  • Hand full Cherry Tomatoes optional

Instructions

  • Preheat the oven to 180C
  • Trim your chicken
  • On a large plate pour a glug of olive oil (very technical but it's just to make it easier to coat the chicken with the mix you're about to make)
  • Add the lime juice, oregano, and cumin powder mix and then add a little salt and pepper to your taste
  • Lay the chicken breasts in and coat them either side
  • In a large frying pan pour a little olive oil and add your knob of butter
  • When it's melted add the chicken and brown both sides
  • Add to a roasting tray
  • Place 2 rashers of bacon on each chicken breast and scatter some cherry tomatoes around
  • Place in the oven for between 20 and 30 minutes or until you chicken is cooked.
