Ingredients
4
chicken breasts

tbsp
lime juice

tbsp
oregano
1
tsp
cumin powder
salt and pepper to taste
Olive Oil

knob
Unsalted butter
8
rashers of smoked or unsmoked bacon - the recipe is easily adaptable

Cherry Tomatoes

Instructions
Preheat the oven to 180C
Trim your chicken
On a large plate pour a glug of olive oil (very technical but it's just to make it easier to coat the chicken with the mix you're about to make)
Add the lime juice, oregano, and cumin powder mix and then add a little salt and pepper to your taste
Lay the chicken breasts in and coat them either side
In a large frying pan pour a little olive oil and add your knob of butter
When it's melted add the chicken and brown both sides
Add to a roasting tray
Place 2 rashers of bacon on each chicken breast and scatter some cherry tomatoes around
Place in the oven for between 20 and 30 minutes or until you chicken is cooked.
Serve with a salad for a simple light family supper
