Homemade Greek Waffles

Homemade Greek Waffles, a savoury waffle recipe ideal for lunch or light family supper. With Feta cheese and a simple Greek Salad
Servings 8 Waffles

Ingredients

  • 250 g plain flour
  • 1 tablespoon caster sugar
  • 1 tablespoon baking powder
  • salt to taste
  • pepper to taste
  • 425 ml Semi Skimmed Milk
  • 115 g Butter Melted
  • 3 medium free range egg
  • 1 tablespoon basil
  • 1 tablespoon oregano
  • 150 g Feta Crumbled
  • 12 Small cherry tomatoes chopped into quarters

Instructions

  • Heat up the iron whilst you make your waffle mix
  • Into a bowl add the flour, sugar, baking powder, salt and pepper
  • In a jug mix the milk, butter and egg
  • Make a well in the middle of the dry ingredients and add in the liquid
  • Whisk but don't worry if it is lumpy
  • Add in your basil, oregano, crumbled feta and chopped cherry tomatoes
  • Whisk before you pour each waffle *otherwise you end up with 1 person getting ALL of the feta and tomatoes*
  • Pour around 1/3 of the mix into the waffle iron
  • Close the lid and wait for them to be ready
  • Serve with a small greek salad of beef tomatoes, cucumber, crumbled feta and some olive oil and balsamic or red wine vinegar
