Strawberry Jam & Jam Sploggers

Ingredients

Homemade Strawberry Jam

  • 1 kg Strawberries
  • 200 ml Water
  • 800 g Sugar Cubes
  • Juice from 1 lemon

Jam Thumbprint Cookies

  • 225 g Self Raising Flour
  • Pinch of Salt
  • 100 g Unsalted Butter
  • 100 g Caster Sugar
  • 1 medium Egg beaten

Instructions

Homemade Strawberry Jam

  • Weight ingredients
  • Chop up strawberries very small
  • Add to the jam maker
  • Programme according to instructions
  • Sterilise jars
  • Pour into Jars and allow to cool

Jam Thumbprint Cookies

  • Pre-heat the oven to 200C
  • Mix the flour and salt together
  • Rub in the butter to make a breadcrumb type mixture
  • Add the sugar and stir
  • Beat the egg and add mix to a stiff dough
  • Split and roll into walnut size cookies
  • Place on a cookie sheet
  • Press your thumb into the top of each cookie
  • Fill the depression with the jam
  • Bake for 12 - 15 minutes until Golden Brown
  • Leave to cool on a wire rack and enjoy
