No Roll Easy Kid Friendly Christmas Mince Pies

Ingredients

  • 225 g Unsalted Butter
  • 350 g Plain Flour all purpose
  • 100 g Granulated Sugar
  • Mincemeat - Available from Amazon.com Robertson's Classic Mincemeat 14.49oz 411g
  • Icing Sugar for Dusting Confectionary Sugar

Instructions

  • Start by rubbing the butter into the flour to a breadcrumb consistency.
  • Then add the sugar
  • Continue working the dough until it forms together. DO NOT add liquid it will mix together and form a dough.
  • Pre-heat the oven to 200C/180C for a fan assisted oven
  • Split the dough into 2 and then take a walnut sized section
  • In your hand roll into a ball and place in a Mince Pie Tray.
  • Using fingers press out the ball to form the base of the mince pie.
  • Fill around a teaspoon of mincemeat into each pie case.
  • Split the remaining pastry into 12 and roll into a ball.
  • Flatten it into a ball in your hands to make a lid and attach to the top pressing to seal it down.
  • IF YOU WANT YOU CAN NOW FREEZE THE PIES FOR UP TO 1 MONTH
  • Bake in the oven for 18 - 20 minutes they should be golden.
  • Remove and leave to cool for 5 minutes then take out and cool on a wire rack.
  • Lightly dust with icing sugar and ENJOY
