Walnut and Chocolate Chip Cookies
We’ve been baking again and we’re up to N for our cooking with kids series so this week’s recipes will include nuts – do go to the end of the post to discover some other fabulous nut recipes to cook and bake with the kids. We love nuts – well my husband and I do and with the kids loving cookies it was time to dig out my favourite Walnut and Chocolate Chip cookie recipe – and these cookies really are delicious.
Ingredients for Walnut and Chocolate Chip Cookies
1/2 cup of margarine 1/2 cup of white sugar 1/2 cup of brown sugar 1 large egg 1 teaspoon of vanilla extract 1/2 teaspoon bicarbonate of soda (baking soda) 1 teaspoon hot water 1 and a 1/2 cups of plain flour (all purpose flour) Pinch of salt 1 cup of chocolate chips 1/2 cup of chopped walnuts
Making Walnut and Chocolate Chip Cookies
This recipe was handed over to me from sister-in-law and is measured out in cups, which is actually ideal for my youngest to read the recipe and work out how much of different ingredients to measure out. We used the mixer this time which the kids love using and started off by adding the margarine and sugars together and cream them together. The egg was then added to this mixture followed by the vanilla extract. In a small jug, we mixed together the bicarbonate of soda and the hot water so that it was dissolved and then poured it into the mix and blended it all together. Into the bowl, we measured the flour and the pinch of salt and then added the chocolate chips. Using our food processor we chopped up the whole walnuts and then added them to the mix and stirred it all together. The kids then measured out a spoon of cookie dough onto the baking sheets – be aware that you will likely get none-uniform cookies and if your kids are anything like mine the cookies will join together! Place in the oven at 175C for 10 minutes (until the edges are browned but they are nice and soft in the centre).
