Without a doubt now that the nights are drawing in and the weather has taken a decidedly wet turn, we turn to some of our family favourite meals especially ones that we can throw together easily and all sit down to enjoy on an evening. Our Rainy Day Lamb Stew in the Slow Cooker is one of my favourites to make. I can throw it all together in the morning, leave it cooking during the day and then when everyone gets home to serve with some steamed vegetables, homemade bread and one of our favourite rainy day desserts (check the suggestion at the end). Family Favourite Lamb Stew in the Slow COoker

One of the reasons we love lamb is how versatile it is. From making a roast to using minced lamb in a shepherd’s pie.
Lamb is naturally rich in protein, low in salt and provides seven essential vitamins and minerals that support good health and wellbeing. These are: niacin (vitamin B3), vitamins B6 and B12, zinc, potassium, phosphorus and pantothenic acid.
Another reason we love this recipe is that we can freeze it once cooked and then defrost it in the fridge and have again especially as it makes enough for 8 of us.
Types of Lamb Cuts to Cook For Family Meals
There are so many different cuts of meat that it can be difficult to tell which to use. The Welsh Lamb website has a great guide to the different cuts including what they are best for.
When we make slow-cooked lamb we either use shoulder cuts or breast diced up, depending on what is available in the meat section at the butchers or supermarket. When cooked in the crockpot or slow-cooked for a long time they are tender and melt in your mouth.
Making Sure your lamb Stew Thickens
One of the biggest questions I get asked when I make a stew in the slow cooker is how I prevent it from getting more soup-like than stew.
There are 3 things that I do that really help.
The first is that I coat the meat in plain flour before placing in the slow cooker.
Then for the last 30 minutes I make sure that the lid is off and that I turn it up to high so that it can simmer and evaporate off some of the liquids.
If it’s very liquid at that 30 minute stage then a couple of tablespoons of cornflour mixed with water are added and this really helps to ensure that it’s not like a soup when it’s served.
Family Favourite Slow Cooked Lamb Stew for Rainy Days
- Slow Cooker
- 600 g dice lamb shoulder
- 1 tablespoon plain flour
- Salt and pepper to taste
- 1 medium onion chopped
- 450 g carrots peeled and chopped in half
- 2 large potatoes peeled and chopped
- 1 l lamb or beef stock
- 1 tablespoon dried parsley
- 1 teaspoon dried thyme
- 2 tablespoons cornflour mixed with 2 tablespoons cold water if needed to thicken the stew before serving
- In a small bowl, toss together the diced lamb, flour, salt, and pepper.
- Add the chopped onion, carrot pieces and chopped potatoes to the slow cooker bowl.
- Pour in the stock.
- Add the dried herbs to the stock.
- Then the flour-coated lamb to the bowl of a slow cooker.
- Stir to thoroughly combine.
- Cook on low for eight hours or high for four hours.
- 30 minutes before serving turn the slow cooker to high and simmer. If needed to thicken the stew, add the cornflour mixture to the slow cooker at this point.
