Simple Cuban Adobo Chicken and Bacon Traybake

With spring comes a different set of family meals, with actually eating in daylight often with the windows open instead of cosy under the hanging light we move from comfort food to lighter meals and also what seems like healthier options as well as more salads and less heavy sauces. This simple Cuban Adobo chicken and bacon traybake is ideal for easy family suppers for spring and summer and you can serve it hot or cold. It also tastes delicious turned into a club sandwich too!

Recipes that are quick to make are the best and this one I promise will take you no time at all to do. I can start these off in a matter of 5 minutes and then leave them to cook whilst I help the kids with their homework or even relax and watch some TV with them before we eat – I know shocking to find tasty food that doesn’t have you slaving over a hot stove the whole time.

Simple Chicken and Bacon Traybake Ingredients

4 chicken breasts

2 tbsp lime juice

1 tbsp oregano

1 tsp cumin powder

salt and pepper to taste

Olive Oil

knob of butter

8 rashers of smoked or unsmoked bacon – the recipe is easily adaptable

Cherry Tomatoes (optional)

Serve with a salad for a light meal or with potatoes and vegetables for something more filling.

Making the Simple Chicken and Bacon Tray Bake

  1. Preheat the oven to 180C
  2. Trim your chicken
  3. On a large plate pour a glug of olive oil (very technical but it’s just to make it easier to coat the chicken with the mix you’re about to make)
  4. Add the lime juice, oregano, and cumin powder mix and then add a little salt and pepper to your taste

  6. In a large frying pan pour a little olive oil and add your knob of butter

Ingredients

  3. Ok, your conversion chart doesn’t tell me what a knob of butter is. LOL! SO, I just guessed and put the amount of butter I wanted. HA! This was still absolutely delicious!! My guys are so happy that I am trying new things in the kitchen! I wouldn’t be able to if it weren’t for easy to follow instructions like your recipe.
