Although I do love making things from scratch and many of the recipes I share here on Rainy Day Mum are made this way. Sometimes time is short and the best option is to reach for the easy one. Cake Mixes have moved on a lot since I was young when you got a box that did a sponge cake and that was about it. Now there are different flavours and varieties. With time short this Cookie Recipe is made with red velvet cake mix from the baking aisle perfect for no-fail cookies (as long as you follow the instructions carefully). So here they are our EASY Red Velvet and White Chocolate Chip Cookies (with sparkles which you can blame my daughter for) perfect to make quickly for Valentine’s Day with the kids especially for the ones you love.
One of the things that I have found difficult when making recipes from cookbooks and on the internet is that my oven isn’t your oven and isn’t the oven of the recipe creator. So to get perfect cookies everytime I always adjust my oven slightly.
How do you figure it out?
I’ve heard all sorts of things and read long guides that tell me how to adjust my oven as well. But in all honestly, the best way to ensure that your cookies come out perfectly every time is to do what you know.
Mine go in at a slightly lower temperature and for a little less time (2 – 5 minutes). I have a fan assisted oven and it seems to run especially hot – great for cooking meals like Sunday Roast but not so great for cookies and cakes! When a recipe calls for 200C I reduce it to around 185C and adjust the time and this seems to be ideal for cooking things right.
It’s also important to remember with a lot of cookie recipes that you need to chill the dough. This will help the cookies keep their shape a little more when cooking.
Red Velvet isn’t complicated – it’s literally cocoa powder with red food coloring but it does make an ideal Valentine Recipe.
These cookies as they are made with cake mix rather than a traditional cookie or biscuit (in the UK) mix are more crinkle cookies and soft than hard like gingerbread.
The sparkles added and the white chocolate chips can be removed no problems without adjusting the recipe but we think that they make them a little extra special.
- 1 red velvet cake mix 468g/16 1/2oz box
- 80 ml sunflower oil
- 2 large eggs
- 340 g white chocolate chips
- 2 C pink and red sugar sprinkles
- Preheat oven to 175C and line two large baking trays with greaseproof paper and set aside.
- Using a stand mixer, beat together the cake mix, sunflower oil, and eggs until fully combined.
- Place dough into the fridge for a minimum of 30 minutes.
- Remove from fridge after the time is up and using an ice cream scoop take out a ball of cookie dough into your hand and roll into a ball.
- Add sprinkles into a bowl and roll dough ball into the sprinkles
- Place onto the cookie sheet and repeat steps for 11 more cookies
- Place cookie sheet into the oven for approximately 8 minutes. Adjust according to your oven.
- Remove from oven and place the white chocolate chips onto the top of the cookies pressing them in slight.
- Place back into the oven for another 2 minutes. Remove and allow to cool completely on a wire rack
- Repeat the steps above you should get around about 24 cookies in total.
