With all of our egg decorating in preparation for Easter we have just a few hard-boiled eggs and although I do like them plain or in a sandwich I decided it would be fun to try some delicious Egg Salad recipes ideal as easy Easter Brunch and Dinner Ideas. This salad was the first that I tried with 3 people in the family that aren’t keen on eggs I knew that I had to make this appealing to them and although it just got we can have it once in a while that was better than the push away the plate response. So here it is our Easy Delicious, Yummy Egg Salad perfect for using up the hard-boiled eggs from Easter.
Easy Easter Salad Recipe
Now as I said 3 of the family don’t really like eggs so I cook them very infrequently but at Easter, over Easter weekend we do hard-boil some eggs to decorate as a family activity. Instead of wasting the eggs I’ve normally just sliced and added to a salad or sandwich myself. But having guests last year I decided to have an Easter brunch and this was perfect for sharing with everyone.
My mum especially loved it on freshly baked bread and I liked it with some rocket leaves from the garden that we have already managed to grow.
The kids though they loved it with some crackers and either spread or dipped them into the salad on the table.
Egg Salad with Salad Cream or Mayonnaise
This recipe calls for mayonnaise, now I made it with this with the first set of eggs we had but because my youngest much prefers salad cream I switch out my Hellmans for some Heinz and I think that swayed her a lot. So although you can make this with mayo don’t worry it also got a thumb up with salad cream from at least one of the kids.
When we made it with salad cream instead of mayo because of the vinegar content I halved the juice we added from the pickle jar.
Simple Egg Salad for Easter Brunch
- 6 hard-boiled eggs shelled
- 4 tablespoons mayonnaise
- 1 tablespoon juice from pickled gherkins
- 1 teaspoon english mustard
- ½ teaspoon powdered mustard
- freshly ground salt and pepper to taste
- ¼ teaspoon onion powder
- ¼ teaspoon smoked paprika
- 4 unsmoked back bacon chopped
- Chop the hard-boiled eggs and place them in a large bowl.
- Add the mayonnaise, pickle gherkin juice, mustard, powdered mustard, salt, pepper, onion powder, and paprika to the boil.
- Stir to combine the eggs and dressing.
- Gently mix in the chopped bacon until combined.
- Place in the fridge until you are ready to serve.
