Crockpot Apple and Cinnamon Rice Pudding
As summer fades we look to comfort food and from the top of our fridge the crockpot slow cooker gets dusted off and brought down to take pride of place on the kitchen counter for the start of our comfort food season at home. This week’s Cooking with Kids A – Z is all about Rice and we’re using our crockpot for an Apple and Cinnamon Rice Pudding Recipe. This simple Crockpot Recipe is ideal for kids to join in and it makes a delicious yummy treat for the kids.
Ingredients needed
1 cup pudding rice (or risotto rice will work as well)
3 and a 1/2 cups semi-skimmed milk
1/2 cup of soft brown sugar
1/2 cup of sultanas
1 teaspoon of cinnamon
1 knob of unsalted butter
1 large cooking apple
1/2 teaspoon vanilla extract
Making Crockpot Apple and Cinnamon Rice Pudding
Start off by lightly greasing the inside of the crock pot.
Add in the rice – I like mixing up how we weigh and measure out the ingredients, this is adapted from a simple rice pudding recipe that my sister-in-law gave me that she uses in her crockpot but I wanted to make it a little more autumnal with the kids. They like measuring in cups as it’s great for working on fine motor skills and my youngest who isn’t yet reading numbers finds it easier to do.
Into the crockpot went the sugar, sultanas, cinnamon, the knob of butter and then the milk.
We then put the slow cooker on high for 1 and a half hours.
After an hour and a half the kids peeled, cored and chopped up an apple and added the small pieces to the rice pudding along with the vanilla extract
We let it continue to cook on high for a further hour and then dished it out for dinner.
