Basic Chocolate Cupcake Recipe

Without a doubt I love Chocolate, and I love cupcakes. I make them for birthdays, treat and if I think that everyone in the family could do with a surprise. Although I will often use our Simple Cupcake Recipe (so easy even the kids can make it) sometimes I like making them a real treat and these basic chocolate cupcakes are ideal. The whole family will enjoy them as well.

This is such a simple recipe and the kids love it as it tastes sweet and not too dry which is a problem that I find with some cupcake recipes. Based on the same ingredients that we use for our simple cupcakes we just exchange some of the main flour for chocolate it works a treat.

If you want you can adapt the cupcakes and add in chocolate chips just remember to sprinkle them in flour before adding them to the mix that way they won’t all sink to the bottom of the cakes. Something that it took me a while to learn but has transformed the way that they turn out.

Ingredients for Simple Chocolate Cupcake Recipe

100 g Plain Flour (All purpose)

100 g Caster Sugar

100 g butter or soft margarine

2 tsp baking powder

2 medium eggs

1 tbsp drinking chocolate powder dissolved in 1 tbsp hot water

The kids love helping to make these – and as the recipe is very forgiving it still turns out well even when they were toddlers, but it does take a lot longer.

Since then I’ve started to make them when they are at school – it only takes around 10 minutes at the most to measure, mix and spoon the cupcake batter into the cases and then a few minutes to bake in the oven before cooling down.

The kids love them so much that at times we don’t even frost them. If we do though they like it with a plain buttercream frosting like this Basic Buttercream Frosting from Crystal and Co. Whereas my husband and I like using my Mocha Frosting that I use for my Coffee and Walnut Cake.

Ingredients
  

  • 100 g Plain Flour All Purpose in the USA
  • 100 g Caster Sugar
  • 100 g Butter At Room Temperature can also be exchanged for Soft Margarine
  • 2 tsp Baking Powder
  • 2 Medium Eggs
  • 1 tbsp Drinking Chocolate Powder Dissolved in 1 tbsp of hot water

Instructions
 

  • Preheat the oven to 180C/370F and line a 12 hole muffin tin with liners.
  • Into a Stand Mixer place the caster sugar and butter. Cream until fluffy.
  • Beat the 2 eggs in a jar and add this to the butter mix with a spoon of flour at a time. This will stop the mixture curdling as it combines.
  • Now add the flour and baking powder to the mixture.
  • Combine and then add the chocolate mix.
  • Spoon the mixture into the cupcake cases. Tap the tray on the surface to level them out.
  • Now place in the centre of the oven for between 12 and 15 minutes depending on your oven.
  • Take out and allow to cool before decorating or eating.

We don’t have any really specialist equipment in the kitchen – I’m a mum that loves to cook but there are somethings that I recommend over others that I have tried and like to direct you to those when I make the recipes. Don’t forget to scroll down to find more delicious easy recipes to bake.

Over the years I have gone through many muffin tins and have learned the hard way that you get what you pay for. For something that is used so frequently in our kitchen, we have a Wilton 12 hole Tin now and it’s lasting longer than most. I have 2 – because I often double up my recipes and freeze half or need more the 12 because they don’t go very far with 2 kids and their friends.

Until my kids were at preschool I mixed everything by hand but then I got treated to a stand mixer – although I would love a Kitchen Aid mixer the difference in price between that and the one we have is substantial and it does the job. Ours is very similar to this stand mixer with a splash guard but the UK version and in cream. It makes cakes and treats for the family so much easier and quicker something that as a busy mum I need.

When I bake just for us I make all of my muffins and cupcakes in silicone cupcake cases – that way there is less rubbish, they can be rewashed and used time and time again. If though I’m making for guests or a cake sale then I have a box of different coloured cupcake cases that I collect whenever I see them on sale.
