Triple Chocolate Chip Muffins Recipe

Time for another coffee morning cake recipe for me – perfect for sharing with friends when you have a play date organised these Triple Chocolate Chip Muffins are quick to make and can be served warm. These aren’t overly sweet and of course you can adapt the recipe for just 1 or 2 types of chocolate chip if you so wish.

Triple Chocolate Chip Muffins Recipe

Makes 12 Muffins

10 oz Self Raising Flour – check here on how to make it if Self Raising flour is not available in your area.
1 teaspoon baking powder
2 oz unsalted butter cubed
3 oz Sugar (Caster better than granulated)
2 oz Milk Chocolate Chips
2 oz Dark Chocolate Chips
2 oz White Chocolate Chips
2 large eggs beaten
7 Fluid Oz of Semi Skimmed (1% milk)
1 teaspoon vanilla extract

Method for making Chocolate Chip Muffins

Preheat your oven to 200 C/400 F

In a bowl put the flour, baking powder and then add in the cubed butter and rub into till you have a bread crumb type consistency. Then add in the sugar and the chocolate chips and mix so that the chocolate chips are coated with the flour (this will prevent them sinking).

In a separate bowl or jug beat the 2 eggs and add in the milk and vanilla extract mix together till it is combined well and then pour over your dry ingredients and mix – but do not over mix – the mix that you need is a rough combined not smooth.

Divide out the mix into 12 muffin cases and put in an oven for 15 to 20 minutes or until golden brown and leave to cool in the tin for 10 minutes and then either transfer to a cooling wrack or serve warm for a treat.
