I have a confession, or maybe I have a problem I don’t know which but I am a bit of a cookbook addict. I have shelves of the books and yes I do use them to try and move us away from our favourite 3 recipes that we seem to eat constantly but even with 4 shelves full of them (yes 4 big shelves) I still crave more and one that has been capturing my attention because of the healthy eating angle is the new Jamie Oliver’s Everyday Super Food! book.

So I’m really excited today to be able to share a recipe from the book with you as well as offer a copy for a lucky reader to win (UK only). As a parent I know how important having a healthy hearty breakfast is for the kids and also for myself, and I’m getting pretty bad at it, I eat my bowl of cornflakes and that’s it, by mid-morning after the school run I’m hungry and reach for the cookies and snack. So what you can you expect from the book – well there are lots of recipes as you would expect from a Jamie Oliver book and all of them have details of the calories, fat, saturated fat, protein, carbohydrates sugar and fibre as well as the time taken to cook them. Many will take longer than his 15 minute cook book but having those details and being a health kick myself (2 stone that’s 28lbs or almost 13kg down since April) I’m happy. I know that the recipes in the book are going to taste delicious and will help me continue down the path I’m on but with out giving up tasty food.

Inside the book you can find – Breakfast, Lunch, Dinner, Snacks & Drinks, plus a section on living well which I found the information in fantastic – things like how fats are good for you but choosing the right fats is most important. Buying organic which we try to do and try to grow organic as well and thriving through drinking water.

We’ve tried a couple of the recipes and I’m sharing my favourite for a healthy hearty breakfast to kick start the day and avoid the mid-morning snacking the Toasted Oats, Mango, Blueberries and Yoghurt from Page 62 of the breakfast section of the book.

Ingredients

(serves 1 person)

1 handful of porridge oats (50g)

1 level teaspoon fennel seeds

1 heaped teaspoon coconut flakes

2 heaped tablespoons natural yoghurt

1 small handful of blueberries

optional: rose water

1 small ripe mango

½ a banana

½ a lime

optional: manuka honey

Start with putting the handful of oats, with the fennel seeds and coconut and toast it gently on the heat until lightly golden brown. I found it easier to stir them in the pan than toss as suggested in the recipe because I’m clumsy and the oats went everywhere!

Once golden brown tip into a bowl and spoon on the yoghurt.

Place the blueberries in the pan with a little water and back on the heat until they burst (if you’ve got rose water add that then as well) and then pour over the yoghurt.

Slice the mango and across and then not all the way through so that it is in cubes.

Add some sliced banana and if you want an extra sweetness although I didn’t need it dribble some honey over the top.

Toasted Oats, Mango, Blueberries and Yoghurt - Jamie Oliver's Everyday Super Food!

Ingredients
  

  • 1 handful of porridge oats 50g
  • 1 teaspoon level fennel seeds
  • 1 teaspoon heaped coconut flakes
  • 2 tablespoons heaped natural yoghurt
  • 1 small handful of blueberries
  • optional: rose water
  • 1 small ripe mango
  • ½ a banana
  • ½ a lime
  • optional: manuka honey

Instructions
 

  • Put the oats into a small frying pan on a medium heat with the fennel seeds and coconut and toast until lightly golden and smelling delicious, tossing regularly.
  • Tip into your bowl and spoon the yoghurt on top.
  • Return the pan to the heat.
  • Place the blueberries in with a good splash of water and a few drips of rose water (if using), which will add an incredible perfumed flavour.
  • Simply boil for a couple of minutes until the berries burst and you have a loose sauce, then spoon over the yoghurt.
  • Slice one of the cheeks off the mango and cut a criss-cross pattern into the flesh, making sure you don’t go all the way through, then turn it inside out so all the pieces pop up into a mango hedgehog (keep the rest of the mango for another day).
  • Peel and slice the banana, then dress both mango and banana with a squeeze of lime juice.
  • Add to your bowl and tuck right in.
  • Great as it is, or if you like you can drizzle 1 teaspoon of honey over the top before serving.
