Rock Cake Recipe

Apart from butterfly cakes the other regular cake I made growing up with my Mum growing up were rock cakes or rock buns. In fact, the very first recipe I shared here on Rainy Day Mum was for some space rock cakes all sparkly and out of this world. For today’s virtual book club post and the weekly theme of construction we’ve gone back to the basics and this is my Mum’s old fashioned rock cake recipe.

This week’s featured book is Goodnight Goodnight Construction Site by Sherri Duskey Rinker, if you have any children that are builder, construction and transport-mad then this is a great picture book for the youngest members of the family. It features the different trucks found on the construction site and with rhymes it is great for language skills as well.

I’ve included measurements in grams and oz but no cups because you can use it as an opportunity to work on number recognition. With children learning number 1 – 10 use the oz measurements and with older children use grams as you can work on 100’s.

Ingredients for this Rock Cakes Recipe

100g / 3 and a 1/2 oz margarine or unsalted butter at room temperature

225g / 7 and a 1/2 oz self-raising flour – all purpose flour will not work for this recipe but I have found Self Raising flour on Amazon by Pillsbury

1/2 teaspoon of ground cinnamon

100g / 3 and a 1/2 oz soft brown sugar plus some for sprinkling

100g / 3 and a 1/2 oz of mixed dried fruit – we made our own with 30g raisins, 30g currants, 20g mixed dried peel and 20g glace cherries

1 medium egg

Milk if needed

How to make Rock Cakes

Weigh out the soft margarine and add to a mixing bowl. Sieve the self-raising flour and add in the cinnamon.

Crumble the ingredients in the bowl together with fingertips until they have a breadcrumb type consistency.

Easy to make rock cakes recipe ideal for simple treats for kids

Add in the sugar and the dried fruit – you can buy bags of mixed dried fruit but as we didn’t have one we made up our own mix using what we had in the cupboard – raisins, currants, dried mixed peel and glace cherries.

Mix with a spoon.

Crack the egg into a jug and whisk.

Then pour into the mix and mix well. You may need to a little milk so that it comes together if the mix is too dry.

Once it is mixed. Line 2 baking trays with some greaseproof paper.

Then divide the mix into 11 or 12 sections and place on the trays.

Sprinkled sugar on top of delicious rock buns

On the tray sprinkle with a little soft brown sugar.

How to make rock cakes with kids - simple recipe ideal for young children and you to bake together

Place in the oven for 15 – 20 minutes until brown. Remove and leave to cool a little before going onto a cooling wrack.

Rock Cakes Recipe

Classic and simple recipe for rock buns to make with or for kids.

Ingredients

  • Preheat the oven to 200C
  • Put margarine into a mixing bowl
  • Sieve the self-raising flour and cinnamon in
  • Rub the flour and margarine together to a breadcrumb consistency
  • Add the sugar and dried mixed fruit and stir together
  • Whisk and pour in the mix
  • Mix together and if it is too dry add a little milk
  • Line two baking trays with greaseproof paper
  • Divide the mixture into 11 or 12 sections and lay on the lined baking trays
  • Place in the oven for 15 – 20 minutes until golden brown around the edges
  • Take out and cool before transferring to a cooling rack.

  1. I thought I was making these for my kids…. but I love the dried fruit and citrus peel in the cookies so they will be lucky if there are very many left when they get home. Delicious!

  3. When I first discovered this recipe I was completely intrigued by the name. Right away I knew I had to try it! I love the simplicity of the recipe and the beautiful end result – delicious rock cakes! These were so good I wish I had doubled the recipe, so I’m making a mental note of that for next time.
